Step 1: Pressure Fermentation

Pressure Fermentation: Oxygen-Free from Day One

We ferment every batch under controlled pressure in stainless steel tanks. Pressure fermentation seals out oxygen from the very first moment of fermentation — creating a protected environment that keeps the cider pure throughout.

Oxygen is cider's worst enemy. It oxidizes delicate aromatics, dulls fruit character, and turns cider brown and flat. By eliminating oxygen exposure entirely, we preserve the vibrant apple essence and amplify the fresh, fruit-forward aromas that make our cider taste exactly like the orchard it came from.

Step 2: Stainless Steel Vessels

Why Stainless Steel, Never Plastic

While many cideries cut costs by fermenting in plastic IBC totes — repurposed industrial shipping containers — we use only food-grade stainless steel.

Plastic totes can leach chemical flavours, scratch easily (harbouring bacteria), and break down over time, compromising every batch that follows. Stainless is inert, sanitary, and built to last.

Because what your cider ferments in matters as much as what goes into it.

Step 3: Real Fruit Addition

Real Fruit Purée: Bold, Authentic Fruit-Forward Ciders

Not all ciders get fruit. The ones that do, earn it.

After fermentation, select expressions receive real fruit purée. We crush whole fruit into purée — no concentrates, no artificial flavours — to extract every bit of colour, aroma, and taste. The result is bold, unapologetically fruit-forward cider.

Step 4: Rack Filtration & Aging

Rack Filtration & Barrel Aging

After fermentation, we rack-filter every batch — clearing spent yeast before transferring to either stainless steel or oak for aging.

The choice isn't arbitrary. Stainless locks in freshness, brightness, and clean fruit character. Oak builds depth, tannin, and a complexity that takes time to earn.

The vessel is chosen for the expression. Every rack, every transfer, intentional.

Step 5: Triple Filtration

Triple Filtration to Crystal Clarity

We filter three times — twice through aging, and once more through sterile filtration at bottling. Each pass removes what doesn't belong: residual yeast, fine particles, anything that could compromise clarity or shelf stability.

The result is a brilliantly clear cider. No haze. No sediment. No shortcuts.

After filtration, every bottle is filled under controlled conditions with precision carbonation — dialled to exact specifications for each batch.

Over-carbonate and you risk blown bottles and gushers. Under-carbonate and the cider falls flat. We use counter-pressure filling to hit the mark every time while minimizing oxygen pickup — protecting the fresh aromatics we've spent months building.

Every bottle is sealed with a crown cap and inspected before it leaves. The result is consistent carbonation, perfect head retention, and cider that tastes exactly as intended the moment you crack it open.

Step 7: Premium Glass Packaging

Glass, Not Cans

We package exclusively in glass. Never cans.

Glass is inert and non-reactive — it won't leach metallic flavours or interact with the cider. Cans can impart a subtle metallic taste and fail to protect delicate aromatics the way glass does. Glass also lets you see the crystal-clear colour we work so hard to achieve. Premium cider deserves premium packaging.

Every bottle is sealed with a crown cap fitted with an oxygen scavenger liner — a rare choice in craft cider, and a deliberate one. The liner absorbs residual oxygen in the headspace, preventing the oxidation that dulls fruit character and creates off-flavours. Most producers overlook this detail. We don't.
