We make cider once a year. Not because we can't make it more often — but because the apples only come once a year, and we're not willing to use anything else.

Every bottle of Hardcore Cider starts with fresh-pressed juice from estate-grown Okanagan apples harvested in the fall. September through November, depending on the variety. That's our entire year's supply. When the harvest is done, it's done. We work with what we pressed, and we make it last.

This is a choice. Here's why we make it.

The Alternative: Concentrate

Most commercial cider producers work year-round because they use apple juice concentrate — a shelf-stable, bulk-produced ingredient that's available regardless of season. Concentrate is made by pressing apples, cooking the juice down to remove water, and shipping it in bulk. It can sit in a warehouse for months or years before being reconstituted and fermented.

Concentrate is consistent. It's cheap. It's available in January, April, July, and October. It lets producers run their tanks year-round and maximize volume.

It also tastes like it. Cooking concentrate strips out the delicate aromatics, fresh fruit character, and terroir that make apple juice interesting. What you get back is a neutral, sweet base — functional, but flat.

We don't use concentrate. We never have.

Why Fresh-Pressed Juice Is Different

Fresh-pressed juice from estate-grown Okanagan apples tastes like where it came from and when it was harvested. Hot, dry Okanagan summers concentrate sugars and develop flavour. Cool nights preserve acidity and aromatics. The specific varieties we grow — Dabinett, Kingston Black, Bulmers Norman — bring tannin, complexity, and character you simply can't get from concentrate.

That character is what makes Hardcore Cider taste like the Okanagan. It's not a marketing claim. It's chemistry and geography.

What One Harvest Means for You

It means when something sells out, it's gone until next year. It means every batch is slightly different — because every harvest is slightly different. It means we're making decisions in October that determine what you're drinking in July.

It also means we take every litre seriously. There's no going back to the tank for more. What we pressed is what we have.

The Upside: Cider That Tastes Like Somewhere

The constraint of one harvest per year is also what makes our cider interesting. Vintage variation. Seasonal character. A connection to a specific place and time.
