Barrels, Tanks & Time: How We Age Every Hardcore Cider
Pressure-Fermentation and Aging Are Two Different Things
We ferment at 5 PSI to eliminate oxygen and preserve fresh fruit character during the active yeast phase. That's about fermentation and flavour development.
Aging is what happens after fermentation. It's about time, maturation, and letting the cider evolve into something refined. Both matter. Both contribute to quality. But they do completely different jobs.
Pressure-Fermentation: Protecting Fruit During Fermentation
When we pressure-ferment at 5 PSI, the CO2 yeast produces stays in the tank, creating a protective blanket that keeps oxygen out. This:
- Preserves fresh fruit aromatics — oxygen dulls fruit character; pressure keeps it vibrant
- Prevents oxidation during fermentation — no stale, cardboard flavours
- Keeps cider still for triple-filtration — we can filter to crystal clarity without fighting carbonation
- Allows precise fruit additions — when we add raspberry, strawberry, or blackberry purée post-fermentation, pressure keeps it fresh and integrated
Pressure-fermentation is about protecting what's happening during the active fermentation phase. It's a technique, not a timeline.
Aging: Time, Maturation, and Refinement
Aging happens after fermentation is done. The yeast has finished its job. The cider is stable. Now it's about time.
- Mellows harsh edges — young cider can be sharp or astringent; time smooths those rough spots
- Develops complexity — flavours integrate, evolve, and deepen into layers
- Adds character from the vessel — barrels contribute oak, vanilla, caramel, and tannins; tanks preserve purity while allowing subtle evolution
- Improves mouthfeel — aged cider has a rounder, fuller texture
Barrel Aging: Where Transformation Happens
We age select ciders in oak barrels — whiskey barrels for Barrel Proof, wine barrels for Black Hole. Barrels aren't just storage containers. They're active participants in the aging process.
What Barrels Contribute
- Oak flavours — vanilla, caramel, toasted wood, spice from the oak and barrel char
- Tannins — structure and grip, giving the cider more body and complexity
- Micro-oxygenation — tiny amounts of oxygen seep through the wood, softening the cider and developing complexity during aging. This is beneficial for maturation — the opposite of what we want during fermentation, which is why we pressure-ferment at 5 PSI to keep oxygen out while yeast is working
- Residual character from previous contents — whiskey barrels bring bourbon warmth; wine barrels bring fruit and acidity
Our Barrel-Aged Expressions
Barrel Proof — aged in freshly dumped Okanagan Spirits whiskey barrels. Vanilla, oak, caramel, and subtle bourbon warmth layered on clean apple character. Complex, sophisticated, unlike anything else we make.
Black Hole — blackberry cider aged in oak wine barrels. The fruit integrates with the oak into something dark, rich, and contemplative. Barrel aging takes months. You can't rush complexity.
Tank Aging: Patience Without Oak
Not every cider needs barrel aging. Some expressions are better aged in stainless steel, where they evolve without picking up oak character.
- Flavours integrate — the cider mellows and harmonizes; sharp edges soften
- Sediment settles — dead yeast and solids drop out, leaving cleaner, clearer cider
- Stability improves — time allows natural stabilization, reducing risk of off-flavours
- Purity is preserved — stainless steel adds nothing; you taste the apples and fruit, not the vessel
Our Tank-Aged Expressions
The Core — tank-aged to preserve clean, crisp apple character. No oak, no distractions. Pure Okanagan apples and time.
Strawberry Ciderita — fresh strawberry and lemon need to shine. Tank aging preserves brightness while allowing integration.
Unhazy Hopped — hops are delicate. Tank aging preserves tropical, citrusy aromatics without oak interference.
How Long Do We Age?
It depends on the expression. Barrel-aged ciders — Barrel Proof and Black Hole — spend months in oak. We taste them regularly. When they're ready, they're ready. Not before.
Tank-aged ciders typically age 2–3 months depending on style. Fruit-forward expressions get less time to preserve freshness. There's no formula — it's about tasting, monitoring, and knowing when the cider has hit its peak.
Why Most Cider Makers Skip This Step
Aging ties up tanks and barrels. Less production capacity, slower cash flow, more complexity. Most producers ferment, filter, bottle, and ship as fast as possible.
We don't. Aging requires dedicated vessel space, months of time, and the expertise to know when a cider is ready. Quality matters more than speed. We'd rather make less cider that's better than more cider that's mediocre.
The Difference You Can Taste
When you drink Barrel Proof, you're tasting months of oak aging — vanilla, caramel, bourbon warmth that doesn't happen overnight.
When you drink The Core, you're tasting weeks of tank aging that allowed the cider to integrate, mellow, and stabilize into something clean and crisp.
