Let's talk about barrel-aging. Not the trendy, Instagram-friendly version where someone slaps "barrel-aged" on a label and calls it craft. Real barrel-aging — months in oak, genuine flavour transformation, and the kind of complexity you can't fake or rush.

What Is Barrel-Aged Cider?

Barrel-aged cider is cider aged in wooden barrels — usually oak barrels that previously held whiskey, bourbon, or wine. The cider absorbs flavour from the wood and the spirit that came before it.

But barrel-aging isn't just dumping cider in a barrel and waiting. It's about time, transformation, and understanding what oak actually does to cider.

Why Whiskey Barrels?

Whiskey barrels add layers of flavour: oak tannins, vanilla, caramel, and subtle whiskey warmth. The wood also allows micro-oxygenation during aging — controlled oxygen exposure that softens the cider and creates a rounder, fuller mouthfeel.

Freshly Dumped Barrels: The Devil's Cut

We source our barrels freshly dumped — recently emptied from whiskey aging, still tight, staves saturated with whiskey. Distillers call this the Devil's Cut: the whiskey absorbed deep into the wood that can't be poured out.

When we fill these barrels with cider, the Okanagan Valley's temperature swings — hot days, cool nights — cause the oak to expand and contract. This cycling extracts the whiskey from deep within the staves, releasing it into the cider along with oak tannins, vanilla, and caramel compounds. It's not surface flavour. It's extraction. Months of it.

The Barrel Contamination Problem

Here's what most cider makers won't tell you: used barrels can be contaminated. If a barrel sits too long after being emptied, or comes from an unknown source, you're risking off-flavours and spoilage.

Common issues:

  • Brettanomyces — wild yeast creating barnyard or Band-Aid flavours. Nearly impossible to remove once it's in a barrel.
  • Acetobacter — bacteria that converts alcohol to acetic acid. Vinegar, not cider.
  • Mold and mildew — from barrels that sat empty and dry. You can't always see it, but you'll taste it.
  • Unknown previous contents — if you don't know what was in the barrel, you don't know what you're getting.

How We Make Barrel Proof

Step 1: Start with 100% Okanagan Apples

Barrel-aging only works if you start with great cider. You can't fix mediocre cider by throwing it in a barrel. We use 100% estate-grown Okanagan apples, pressure-fermented at 5 PSI to preserve fruit character. That's the foundation everything else builds on.

Step 2: Filter After Fermentation

After fermentation, we filter to remove yeast and sediment. Clean, stable cider goes into the barrels — nothing else.

Step 3: Age in Whiskey Barrels for Months

The cider sits in freshly dumped Okanagan Spirits barrels for months. Not weeks. Months. During this time:

  • Oak tannins add structure — grip and body you can't replicate any other way
  • Vanilla and caramel develop — from the oak and the barrel char
  • Whiskey warmth infuses — the Devil's Cut extracted through temperature cycling
  • Micro-oxygenation softens the cider — controlled oxygen through the wood creates complexity and a velvety mouthfeel

We taste the barrels regularly. When it's ready, it's ready. Not before.

Step 4: Filter After Aging

After aging, we rack and filter again — removing sediment, ensuring clarity and stability.

Step 5: Sterile Filtration Before Packaging

Before bottling, the cider goes through sterile filtration — removing any remaining microorganisms, ensuring shelf stability, and preventing refermentation in the bottle. We filter a minimum of three times total. No shortcuts.

Step 6: Bottle in Glass

750ml glass bottles. Glass doesn't leach chemicals, doesn't affect taste, keeps the cider exactly as it should be. No cans. No plastic.
